125g butter
1 cup castor sugar
2 eggs
1 cup mashed banana
1 tsp vanilla essence
2 1/4 cups self-raising flour
1/4 soda bicarbonate
1/2 cup water
Topping
50 g softened butter
2 tbsp self-raising flour
2 tbsp sugar
1 tsp ground cinnamon
2 tbsp chopped walnuts
- preheat oven 180'c, grease square or round cake tin base with non stick baking paper
- cream butter & sugar till light & fluffy.
- add eggs one at a time, beating well after each addition.
- add banana & vanilla and beat well.
- sift flour with soda bicarb and add to creamed mixture
- add water & stir till well mixed.
- pour into baking tin.
- to make topping, rub butter into flour then add remaining ingredients and mix well.
- place topping all over cake mixture
- bake for 45-50 minutes or till skewer comes out clean.

Sempoi Pizza Base
(TQ to Philidelphia Cheese Cook Book)

A:
1 cup sifted Pizza / Bread Flour (if dont have, plain flour works well too)
1 teaspoon caster sugar
1/4 teaspoon salt (i only use a pinch)
1 teaspoon dry yeast
B:
1/3 cup lukewarm water
1 tablespoon olive oil (or veg oil will do)
-pre heat oven @ 160'C
- Mix A all together in a bowl.
- Mix B together & pour slowly into A, mix till form soft dough
- Transfer on to a lightly floured surface & knead till smooth (about 3-5 minutes).
- Shape into a ball & place into a lightly greased bowl, cover with plastic wrap & rest it in a warm place for 20-30 minutes or until doubled.
- Once doubled, transfer onto a lightly floured surface & roll flat, place on a pizza pan or any flat baking pan
- Works well with any topping of your choice :)
- bake until well cooked ...

3/4 cup milk
125g butter, chopped
1 1/4 cups plain flour
3 eggs at room temperature
1 tspoon vanilla essence
oil for deep frying
caster sugar
ground cinnamon
- combine milk & butter in a medium saucepan over moderately low heat
- stir till butter melted & comes to boil
- off heat, add flour & stir
- transfer into food processor (blender also can)
- whisk eggs & vanilla essence, while processor is running, pour in eggs mixture slowly into flour mixture & process till thick & glossy
- spoon into piping bag with normal plain nozzle
- heat oil (make sure really hot) & reduce to medium heat,
- pipe batter (can make it any shape you want hehe) into oil, deep fry till golden brown
- transfer into bowl & coat with sugar & cinnamon mixture (or anything you like)

150ml water

200g 70% dark chocolate, chopped
- For the chocolate sauce, place sugar and water in a small saucepan over medium heat and cook until the sugar dissolves.
- Add chocolate, leave for about 10-20 seconds and then stir until chocolate melts.
- Pour into a bowl and reserve until ready to use.
- This sauce keeps in the fridge for up to a week; just reheat gently in the microwave before use.
- Great for toppings for anything .. :)

Sempoi Meat-pie Scroll
1 tbsp olive oil
1 small brown onion, chopped finely
1 clove garlic, crushed
400g mince beef
2-3 tomatoes, diced
1 tbsp tomato paste
2 tbsp Worcestershire sauce
coarsely chopped parsley (ikut banyak mana nak)
- heat oil, cook onion, garlic till soften,
- add beef, cook till change color,
- add tomatoes, tomato paste, Worcestershire sauce & cook till boil, reduce heat simmer till sauce thickens. (Do not overcook if not it'll be too dry).
- remove from heat & set aside to cool.
to make the scroll dough:
2 (300g) cups self-raising flour
1 tbsp caster sugar
50gm butter, chopped coarsely
3/4 cup (180ml) milk
additional filling:
1 cup pizza / mozzarela cheese (can add more if like)
- stir flour & sugar till well mixed, rub in butter with fingers till well mixed, stir in milk, mix to a soft, sticky dough. knead dough on floured surface till enough to roll. roll dough to rectangle with about 1cm thick.
- spread beef mixture over dough, sprinkle with cheese.
- Roll dough tightly with filings till end. trims excess ends, sliced roll into small pieces (should make about 12).
- place sliced roll onto greased muffin tray / flat tray.
- bake about 25 minutes on 180'c / 160'c fan forced oven.
in case, u don't feel like making a scroll, after you've rolled the dough, use a round cookie cutter, press cut the dough, press into greased muffin tray, put the beef mixture on top & sprinkle with cheese & bake as above ... (I did it this way, less messy ;))

Sempoi Bantai Bread
I consider this my most successful attempt at making bread :) after many many manyyy trials hehehe ... u can do it too :)
1 sachet / 1 tbsp dry yeast
3 1/2 cups plain flour
1 tsp salt
1/4 cup sugar
1 cup warm milk
2 tbsp melted butter
1 egg, lightly beaten
eggwash:
1 egg
1 tbsp milk
mix dry ingredients & sift, make well in center & add all liquid ingredients till form soft dough. knead about 10-15 minutes till smooth & elastic. place in a greased bowl, cover, leave in warm place till double sized (about 50-60 mins). once rised, punch into center & knead for 1 min. shape according to need, place on to a greased baking tray, brush with plain water. leave in warm place to rise again about 40 mins. brush with eggwash. bake at 200'c for 20-25 minutes
- can make sosej bun, or apa2 bun lah ... bun-tie ja ...
Cinnamon tea bun
replicate the above recipe, just add:
1/2 tsp cinnamon powder
1/4 tsp mixed spice
topping:
beat 60g butter till light & fluffy, add 1 cup sifted icing sugar + 1 tbsp milk till fluffy

Sempoi Bengkang Hijau (TQ Mak @ my beloved granma)
A simple yet scrumptious delicacy by my beloved granma :)
1 cawan gula / cup sugar
2 cawan tepung gandum / cups plain flour
3 biji telur / eggs
1 cawan air daun pandan / cup pandan water (extracted from about 7 pieces cut pandan leaves)
2 cawan santan / cups coconut milk
- preheat oven @ 170'c
- mix all ingredients in a bowl till well combined
- pour into a greased baking tray
- bake for about 50-60 minutes
- can sprinkle sesame seeds / fried shallots be4 bakingHappy trying ... :)

- Melt butter and cooled, mix with eggs, milk, vanilla essence, honey and sugar till well combined.
- Add self raising flour, stir slowly till well combined.
- Spoon batter into prepared papercups in baking tray, can be half or 3/4 depends on how big you want it to be.
- Bake in 180'c preheated oven for about 15 mins or till skewer comes out clean.

Canned diced tomato
1/2 Capsicum cut into pieces
3 cloves of garlic - smashed
1/2 yellow onion sliced
3 fresh mushroom - sliced
3 gourmet potato - cut into wedges
Salt
1/2 cup of hot water
- marinate beef with honey, tomato sauce, Worcestershire sauce & pepper (set aside)
- greased pot or deep flat frying pan with olive oil & heat at medium heat
- put marinated beef into pot & cover, let the the beef cook till about its stock comes out
- put in all veggies and stir, adding salt & hot water
- continue to cook till beef cooked ... :)

canola spread / soft margarine / butter
garlic

plain flour (about 2 tbsp)
2 eggs - beaten
breadcrumbs - (use the brown color and fine grounded ones instead
of the white & flaky type - look for Anchor brand original breadcrumbs)
- season chicken with salt & pepper & plain flour
- dip the nugget into the beaten eggs & roll on breadcrumbs, make sure fully covered
and deep fry for about 3-4 minutes or until about golden brown.

1tbsp orange zest
2tbsp poppy seed
- put all ingredient into mixing bowl, using electric mixer beat all ingredients for 3 minutes.
- grease loaf tin n line w baking paper.
- bake at 170'c for 45mins or til baked.

Sempoi Butter Cake with Lemon Icing
Made this sometime ago, the recipe is simple & really nice .. :)
Butter Cake
250gm Butter (soften: to soften butter, put in microwave for 20 seconds only)
1 1/4 cups Caster sugar
4 Eggs
2 teaspoon Vanilla essence
2 cups Self raising flour (sifted)
1/2 cup Milk (liquid)
- Preheat oven 180'c / 160'c fan forced, lightly grease baking pan
- Using electric mixer, beat butter and caster sugar till pale and creamy.
- Add eggs 1 at a time beating well after each.
- Beat in vanilla essence.
- Fold in flour alternately with milk.
- Spoon into pan and bake for 55 minutes or until tested with skewer.
Lemon Icing
1 1/2 cups Icing sugar
1 lemon Grated zest
50 gm Butter soften
1 1/2 tbs Lemon juice
- sift sugar into medium bowl, add in lemon zest and butter mix till smooth, stir in juice
- spread on top of butter cake

1 medium clove garlic, chopped
1 small yellow onion, finely chopped
1 small carrot, peeled & finely grated
3 fresh / canned button mushroom
1/2 cup dried breadcrumbs (from packets, not actual stale bread)
1/2 cup BBQ sauce (can also reduce to 1/3 if u dont really like the taste)
1 tablespoon dried oregano or sage
1 large egg
1/4 teaspoon salt
1/2 teaspoon coarsely ground black pepper
- preheat oven 180'c, grease & line a loaf tin w baking paper
- mix ALL in a bowl till well combined
- press mixture firmly into the tin
- bake for 44 minutes or till cooked through
- (in case it's still soft, transfer on to a baking tray & bake for about 10 minutes) (lupa nak boh tadi sory :))
the recipe recommended to accompany it with roasted veg .. can also with baked microwave-steamed potatoes*

5 large potatoes

- cook the potatoes in microwave for about 8-10 minutes or until soft (dont let it be too soft)
- cut potatoes into wedges
- season with salt & pepper to taste
- drizzle with oil all over
- place on a baking tray lined w baking paper
- bake in 170'c oven till crisp, dont over cook it'll be too dry ...
- dip it in bbq sauce + mayonis / seet chilli sauce + sour cream .. or apa2 sos u like :)
