Sempoi Stu Daging dgn Jus Nenas
800gm-1kg daging / lamb (lagi sedap yang bertulang)
2 sudu besar tepung gandum
1/3 cawan minyak zaitun
20gm mentega
6 biji bawang kecil, dibelah dua
2 biji bawang putih, tumbuk kasar
150gm cendawan butang, dibelah dua / dihiris
1 lobak merah, dipotong bulat2 sederhana
1 batang saderi (celery), dipotong sederhana besar
1 cawan juice nenas (saya guna yg kotak sj :))
2 sudu besar pes tomato (saya guna sos spageti :))
1 cawan stok daging / ayam
2 sudu besar Worcerteshire sauce
1 sudu teh herba thyme (fresh boleh, kering pon boleh)
1 sudu teh herba chives (fersh boleh, kering pon boleh)
- salut daging / lamb dengan tepung (jangan terlalu tebal)
- panaskan minyak zaitun dalam periuk yang besar, goreng daging berperingkat hingga agak perang. jangan masak semua sekali. angkat dan ketepikan.
- masukkan mentega ke dalam minyak bekas gorengan tadi
- masukkan bawang kecil, bawang putih, cendawan, lobak merah dan batang saderi hingga agak lembut
- masukkan juice nenas hingga mendidih
- masukkan daging / lamb, pes tomato, stok, Worcerteshire sauce, thyme & chives, gaul hingga sebati
- perlahankan api, tutup periuk dan masak hingga daging empuk dan kuah hampir pekat (1jam-1jam 15 minit lebih kurang)
* pastikan kuah pekat
** makan dengan nasi putih / roti atau apa2 yg anda suka

Sempoi Murtabak Daging (mince beef wrap) - K Nuri's recipe

Alhamdulillah...leganya dapat buat murtabak sendiri utk iftar semalam & syukur menjadi. Thanx to the simple & wonderful recipe given by a friend kak Nurina (I just adjusted a bit according to my family's taste). My family just love it, tu yang lagi lega rasa :D
oil
2 tablespoon blended onion + chili (I used 1 tablespoon chilli powder + 1 chopped medium onion)
500gm mince beef
1 tablespoon meat curry powder (rempah kari daging)
salt & sugar to taste
3 eggs
- fry blended mixture / onion and chilli powder till fragrant
- add mince beef, fry till all cooked
- add curry powder, salt & sugar to taste & fry till almost dry, set aside to cool down a bit
- beat eggs
For the skin / wrap, i used Kawanku Onion Paratha frozen dough
5 pieces of onion paratha frozen dough, thaw and rolled out to expand it a bit
- divide mince beef misture into equally 5 protions
- mix each portion with some amount of beaten eggs
- fry 1 portion of mince & eggs mixture (omelet liked), just for about 1 minute
- scoop & transfer on to 1 rolled paratha dough, fold into square or round like shape
- place of frying pan again with a bit more oil till well cooked, pressing the wrap to ensure fillings are cooked through
- serves warm with pickled onions, dhal or curry

Sempoi Black Pepper Beef
I just love black pepper dishes be it meat, chicken, fish or veggies! :) Not too much though hehe. This is one of the simplest dish I've ever made. This however used packed mix , I also have another recipe using fresh black pepper below.
1 medium sized onion, sliced
1-inch ginger, sliced
500gm beef, sliced quite thinly
1 medium / 1/2 large red capsicum
1 packet Black Pepper mix (I used Seri Aji's, or any other that's available from stores)
3 tablespoon oil
- heat oil in frying pan, add onion & ginger, saute till almost brown
- add beef, stir fry over medium heat till beef almost tender
- add capsicum & black pepper mix, stir till all well combined
- you may want to add about 2 tablespoon hot water just to make the dish a bit moist
- serves hot
Using fresh ingredients

Sempoi Nasi Daging Lekaih (Fast Beef Rice)

1 kg beef (gravy beef / chuck tender / rump / any cut will do :))
2.5 liters water
- cook beef till tender (if u have beef stock will be even faster :))
- if using ready-to-cook stock, slice beef into about 1cm thick & 2-inch long
2 cups basmathi rice / long grain rice
2-3 shallots, sliced
1-2 garlic, sliced
2-inch ginger, sliced
4 cardamoms
3 cloves
2 star anise
1 cinnamon stick
oil
salt
- rinse and drain rice
- heat oil in rice cooker pot over medium heat
- saute shallots, garlic, ginger & spices till almost golden
- add beef (if, as explained above)
- add rice, fry for about 1 minute
- add broth / stock (ratio - 1 cup rice : 1 1/2 cups broth or depending on the instruction for cooking the rice)
- season with salt to taste (if using stock, please taste before adding salt)
- transfer into rice cooker & cook as usual
- stir once when rice is 3/4 way cooked
- serve hot with tomatoes & cucumber salad or any veggies of your choice

Sempoi Lasagne - K Ati's recipe :)
My family lurrveesss lasagne, getting this recipe from a friend, K Ati @ Hariati Jamaludin is just wonderful. Going to make it after this, just couldn;t wait to share the recipe first. will upload the pic later :)
*do not freak out when you read as there's a number of items in the ingredients hehe .. but truly its simple to make .. x worries :)
1 box San Reno instant lasagne slices
1 packet grated Mozzarella cheese for topping
Beef sauce
800 gm mince meat
Olive oil
2 packets of Maggi Bolognese mix (She likes to add this one cos it thickens the sauce..)
1 large bottle of pasta sauce (Dolmio / Preggo /Lego)
4 big onions (finely chopped)
2 whole garlic (finely chopped)
1 can button mushroom (finely chopped)
Tomato sauce / puree
Ground black & white pepper
Dried oregano leaves (finely chopped)
Sugar and salt to taste
- In a large pan / wok , fry off the chopped garlic and onion in a cup of olive oil, until nicely brown.
- Add the mince beef, seasoned with pepper, stri until its cooked.
- Add the pasta sauce, Bolognese mix, tomato puree, mushroom, oregano, pepper
- cook until it simmers or the sauce thickens. Add water if necessary until it reduces into a nice and thick gravy.
- Add salt and sugar to taste (3 to 4 heaps for a start and adjust accordingly)
White cheese sauce
5 tbsp flour
2 tbsp butter
1 carton of fresh milk
1 cup of water
2 cheddar cheese slice
Salt & pepper to taste
- Add flour and fresh milk + water on the side and strain so that it doesn’t clot together .
- Melt butter in a deep pan and add the flour mix into the pan, stirring all the time
- Add cheese , salt and pepper to taste.
- Keep stirring consistently on low heat so until the sauce thickens (ala cabonara sauce!!)
Sequence of layer..
1. Beef sauce
2. Lasagne The 1st sequence is purposely different from the rest ….
3. Beef sauce
4. White sauce
5. Lasagne
6. Beef sauce
7. White sauce
8. Lasagne
9. Beef sauce
10. White sauce (to end)
11. Finally to drizzle with mozzarella cheese to cover the top!!
Bake in the oven about one hour until it is nicely brown (not too brown though , or it'll be too crusty!). Ideally, you should do it in the morning if you want to eat it late afternoon (3-5pm) so that it is still warm and nicely set. It will be too runny if you serve them immediately after cook…
Tip : If you do it one day in advance, cut the lasagna (when it is cool) so that it fits nicely in plastic containers and store in the fridge (or freeze it). Heat up in the microwave before serving.

Sempoi Bolognaise Sauce
Obviously its again no rocket science. This is the way I've learned & practised making the sauce till now :)
* estimated serves 6 people
pasta - spaghetti or any of your choice
1 medium size onion, diced
3 cloves garlic, coarsely chopped
500g mince beef / chicken
dried oregano
1 medium carrot, diced into small cubes
6 fresh button mushroom / 10 canned mushroom / whole can of champignon (smaller sized)
3 tomatoes, diced / 1 can of italian tomatoes
500ml pasta sauce (i mix 2 types of sauce, family fav = bertolli / preggo / stromboli; use any brand of your choice)
salt, pepper & sugar
olive oil / canola oil / veg oil
- heat oil in a medium - large saucepan, on medium heat
- stir fry onion & garlic
- just almost brown, add beef & continue frying till beef all almost cooked with its stock still available in pan (do not overcook, it'll be dry), add oregano
- add carrot, mushroom & tomatoes, continue stirring to well combined
- pour in sauce, mix well, slightly reduce heat & let the sauce simmer till quite thick
-add salt, pepepr & sugar to taste
- once quite thick, off heat & let to set for about 5 minutes
- serve warm w yoru choice of pasta with sprinkles of parmesan cheese

Its brunch again today before school restarts tomorrow :). Was wondering what to make for hubby & kiddos till Irdina said, burgers ma. Okeee .. but no burger buns & it'll take some time to make. Then remembered that I bought pancake mix few days ago. Why not fuse up burgers & pancake? :D so here's what they had ..
Burger:
Follow the recipe by Curtis Stone that I posted yesterday, just improvise a bit by adding:
1/2 large carrot, grated finely (just to get my kids eat veg)
1/2 cup breadcrumbs
- shape burger mixture in a ring mould or just do it by hand
- grease grillet / frying pan
- cook till burgers are nicely done
pancake:
I used ready to make pancake mix (Green's) but it'll be great to do your own:
1 egg
1 teaspoon sugar
1 cup full cream milk
1/2 teaspoon vanilla (can opt this for savoury pancake)
1 cup self raising flour
1/4 teaspoon baking soda
a pinch of salt
- whisk egg & sugar
- add the rest ingredients & mix well
- cook batter on greased pan
* serve with salads & sauces as preferred
** i ran out of salads ;), the pic will show just the burger & pancake ...

1 tsp Worcetershire sauce
1/2 tsp salt
1/4 tsp pepper
1 large egg beaten
- Heat tbsp of oil in heavy small saute pan over medium heat.
- Add onion, salt and pepper and saute till tender. Stir in minced garlic.
-Mix cooled onions and garlic mince, mustard, Worcetershire sauce, 1/2 tsp salt.
- Add egg. divide mixture according to your preferred size and place in 4-inch ring moulds.
- Preheat pan or bbq for meduim-high heat. brush bread roll with butter. Grilll, patties until brown then turn, cook until meduim-rare, or to your liking.
- To serve, place lettuce on bun then patties and cheese on top.

Sempoi Meat-pie Scroll
1 tbsp olive oil
1 small brown onion, chopped finely
1 clove garlic, crushed
400g mince beef
2-3 tomatoes, diced
1 tbsp tomato paste
2 tbsp Worcestershire sauce
coarsely chopped parsley (ikut banyak mana nak)
- heat oil, cook onion, garlic till soften,
- add beef, cook till change color,
- add tomatoes, tomato paste, Worcestershire sauce & cook till boil, reduce heat simmer till sauce thickens. (Do not overcook if not it'll be too dry).
- remove from heat & set aside to cool.
to make the scroll dough:
2 (300g) cups self-raising flour
1 tbsp caster sugar
50gm butter, chopped coarsely
3/4 cup (180ml) milk
additional filling:
1 cup pizza / mozzarela cheese (can add more if like)
- stir flour & sugar till well mixed, rub in butter with fingers till well mixed, stir in milk, mix to a soft, sticky dough. knead dough on floured surface till enough to roll. roll dough to rectangle with about 1cm thick.
- spread beef mixture over dough, sprinkle with cheese.
- Roll dough tightly with filings till end. trims excess ends, sliced roll into small pieces (should make about 12).
- place sliced roll onto greased muffin tray / flat tray.
- bake about 25 minutes on 180'c / 160'c fan forced oven.
in case, u don't feel like making a scroll, after you've rolled the dough, use a round cookie cutter, press cut the dough, press into greased muffin tray, put the beef mixture on top & sprinkle with cheese & bake as above ... (I did it this way, less messy ;))

Stew:
Dice 2 pieces of beef steak (about 1.5kg)
Honey
Tomato Sauce
Worcestershire Sauce
Pepper
Canned diced tomato
1/2 Capsicum cut into pieces
3 cloves of garlic - smashed
1/2 yellow onion sliced
3 fresh mushroom - sliced
3 gourmet potato - cut into wedges
Salt
1/2 cup of hot water
- marinate beef with honey, tomato sauce, Worcestershire sauce & pepper (set aside)
- greased pot or deep flat frying pan with olive oil & heat at medium heat
- put marinated beef into pot & cover, let the the beef cook till about its stock comes out
- put in all veggies and stir, adding salt & hot water
- continue to cook till beef cooked ... :)
Garlic bread
french loaf / baguette / roti hotdog
canola spread / soft margarine / butter
garlic
dried parsley flakes
chop garlic finely mix well with 3 tbsp of canola / marjerin / butter
add pasrley flakes
spread on to sliced bread & toast in oven

1 small carrot, peeled & finely grated
3 fresh / canned button mushroom
1/2 cup dried breadcrumbs (from packets, not actual stale bread)
1/2 cup BBQ sauce (can also reduce to 1/3 if u dont really like the taste)
1 tablespoon dried oregano or sage
1 large egg
1/4 teaspoon salt
1/2 teaspoon coarsely ground black pepper
- preheat oven 180'c, grease & line a loaf tin w baking paper
- mix ALL in a bowl till well combined
- press mixture firmly into the tin
- bake for 44 minutes or till cooked through
- (in case it's still soft, transfer on to a baking tray & bake for about 10 minutes) (lupa nak boh tadi sory :))
the recipe recommended to accompany it with roasted veg .. can also with baked microwave-steamed potatoes*

5 large potatoes
olive oil / veg oil
salt & pepper
- cook the potatoes in microwave for about 8-10 minutes or until soft (dont let it be too soft)
- cut potatoes into wedges
- season with salt & pepper to taste
- drizzle with oil all over
- place on a baking tray lined w baking paper
- bake in 170'c oven till crisp, dont over cook it'll be too dry ...
- dip it in bbq sauce + mayonis / seet chilli sauce + sour cream .. or apa2 sos u like :)

- mix ALL in a bowl till well combined
- press mixture firmly into the tin
- bake for 44 minutes or till cooked through
- (in case it's still soft, transfer on to a baking tray & bake for about 10 minutes) (lupa nak boh tadi sory :))
the recipe recommended to accompany it with roasted veg .. can also with baked microwave-steamed potatoes*
sempoi baked steamed potatoes
5 large potatoes
olive oil / veg oil
salt & pepper
- cook the potatoes in microwave for about 8-10 minutes or until soft (dont let it be too soft)
- cut potatoes into wedges
- season with salt & pepper to taste
- drizzle with oil all over
- place on a baking tray lined w baking paper
- bake in 170'c oven till crisp, dont over cook it'll be too dry ...
- dip it in bbq sauce + mayonis / seet chilli sauce + sour cream .. or apa2 sos u like :)
