Banana Hazelnut Chocolate Mini Muffins
2 1/4 cups (335gm) self-raising flour
3/4 cup (165gm) caster sugar
2/3 cup mashed banana
1/2 cup chopped hazelnut chocolate (Cadbury or any brand of your choice)
2 eggs, lightly beaten
1 cup (250ml) milk
1/2 cup (125ml) vegetable oil
- preheat oven 180'c, place cupcakes casing in 12 mini muffin tray
- sift flour and sugar into large bowl, stir in hazelnut chocolate
- stir in all remaining ingredients
- DO NOT overmic, mixture should be lumpy
- spoon mixture into muffin casings
- bake about 10 minutes or until golden brown
- cool on rack
- serve lightly dusted with icing sugar

Sempoi Tempoyak Kunyit - shared by Tini
aaahhh...the King of Fruit season is here again. Missing it very much from where I am at. Tempoyak @ fermented Durian flesh is a much loved & a must have for many people in Malaysia during the durian's season. This is one of the traditional ways of preparing the tempoyak. This is a recipe shred by my friend Kartini that she got from her friend (thank you Puan Thaudhah, semoga murah rezeki)
A
1 genggam tempoyak / a handful of tempoyak (about 1 cup)
1 batang batang serai - dipotong halus dan ditumbuk / 1 lemon grass, cut & pounded
1 helai daun kunyit di hiris halus / 1 tumeric leaf, finely slicedB
1 batang serai/1 lemon grass
5 biji cili besar/ 5 red chillies
3 biji cili padi/ 3 small bird eye chillies
2 cm kunyit hidup/2 cm fresh tumeric
10 ekor ikan bilis yang dibelah dua/ 10 dried anchovies, halved
Garam, gula secukup rasa / salt to taste
Air 3 sudu./ 3 tablespoon water
1. Bahan A di gaul . Letak tepi./Mix A till well combined & set aside
2. Bahan B dikisar halus/blend B till fine
3. Bahan B yang telah dikisar, digaul bersama Bahan A. Masak semuanya sehingga pekat./Mix A & B together till well combined
4. Hidang bersama ikan goreng dan ulam2./serve freshly made with salad of your choice e.g. cucumber/lettuce etc

Sempoi Roast Chicken w Mango Sauce - Tini's recipe
I really admire people who can create their own recipes. Two thumbs up for my beloved friend Kartini for doing so. As for me, I am still at the 'adjusting' stage ... have not tried doing my own for ages .. :). TQ Tini for this great recipe. I c&p from your FB notes .. :)
I used below ingredient with hope the chicken would turn out goody-licious. I kinda like it, hence I thought I should share it with my frens.

Ingredient :
[A] CHICKEN
200 gm chicken
1/2 clove of garlic - blend.
2 tablespoon bbq sauce
2 tablespoon sweet soy
2 spoonful margerine/butter (according to your preference)
Salt to taste
Method
1. Mix ingredient [A] and marinate the chicken for 20 mins. (I did mine for 5 min considering the time)
2. Roast the chicken at 220 C for 40 min. At half time (20 min) drain the fluid from chicken tray, turn the chicken and continue to roast.
3. Dish out in a serving plate.
Ingredient :
[B] MANGO SAUCE
1 mango - cut into little pieces and then blend.
1 teaspoon vinegar
1/2 cup of chicken stock
Salt to taste
Method
Mix all above and cook on low heat.
Once well blended, dish out.

Sempoi Lemonade

about 1/2 cup of sugar
lots of water
- Squeeze 3-4 lemons and pour in a jug. (-if jug too big squeeze in some more)
-Pour the sugar in and satret stirring until sugar is totally disolved.
-Than add water, depends if the jug's big put more water and add more lemon juice and sugar.
-Stir the hold thing until everything is mixed.
-For finishing touches cut the remaining lemon into slices and put in the lemonade, if sour put in a tbsp of sugar.

Sempoi Bengkang Pisang (Banana Sweetcake) - Taste of Batu Gajah recipe book
A simple, ease-my-life, yummy great recipe by Datin Seri Raihan Abdul Rahman from her book "Taste of Batu Gajah"
40 small banana (she recommended pisang emas, but there's none here so I used about 6 large banana)
2 cups plain flour
2 cups coconut cream / milk (equivalent to a can)
1 teaspoon vanilla essence
1 egg
1 cup sugar
1 teaspoon salt
butter for greasing
- preheat oven @ 200'c
- mash bananas in a large bowl
- lightly beat egg & add into banana & mix well
- add sifted flour & sugar alternately & mix till well combined
- pour coconut cream / milk bit by bit while stirring
- add vanilla essence & salt & mix well
- pour into a square (10 inch by 2 inch) dish or any dish you feel suitable
- bake about 50-60 minutes
- set aside to rest about 5-10 minutes
- sweetcake cooks well when its firm when press & brown outside

Sempoi Choc & Strawberry Bread Pudding
Please don't mind the looks ;) ... the recipe is great ...
3 small croissants (recommended by the recipe, I used 5 pieces soft white bread with crust)
100g white chocolate, chopped coarsely (I used plain choc)
1 cup raspberries (I used strawberries coz that's all i had, roughly chopped)
1 1/4 cups milk
3/4 cup cream (in case you do not have this, add another 1/2 cup of milk)
2 tablespoon caster sugar (can reduce if you want to control the sweetness)
1/2 teaspoon vanilla essence
3 eggs
- preheat oven 160'c, grease & line large muffin pan with baking paper in every hole
- cut / tear bread into small pieces (not too small though :))
- in a medium saucepan heat milk, cream, sugar & vanilla till over medium heat till boil
- whisk egg in a bowl,
- remove milk mixture from heat and slowly pour eggs while whisking slowly till well combined
- put bread into muffin pan leaving some space in between for chocolate and strawberries
- pour milk mixture (custard) to fill each hole almost to top
- bake in oven for about 25-30 minutes or till almost springy
- take out pan from oven & let the bread pudding rest to cool in pan for about 10-15 minutes
* the recipe recommended to bake using the water bath method that is by placing the muffin pan in a large baking tray filled halfway with hot water, but I don't have a large enough baking tray to fit my muffin pan so i baked it direct + I love having some crusts :D

Sempoi Banana & Custard - My Aunt's signature dish (TQ Acik Intan :))
8 - 10 almost ripen banana, sliced half vertically
- Fry / grill banana (without flour) with some oil on a small frying pan
- After it's fried, arrange in a casserole dish or any square dish.
Custard:
4 cups water
2 egg yolks
50g caster sugar
40g custard powder
1/2 a-can of condensed milk
a pinch of salt
1 tsp vanilla essence
-mix custard powder with water till dissolved
-put all ingredients into a saucepan
-cook over medium heat stirring until custard thickens
-once thickened, remove from heat pour onto banana
-set aside until cooled
- serve

Sempoi Cleansing Fruit Juice
Its not rocket science but this juice I had yesterday was really refreshing. I've improvised a bit the juice by 'fusioning' it with an ingredient from another juice I've tasted before.
2 medium size carrots
2 large red apples
2 stalks celery
1cm ginger
- blend together using fruit extractor
- do not add water / sugar

Sempoi K Batiah's Strawberry Bread
A friend made this bread sometime ago yet the taste still lingers in my mouth. Though she got it from the internet, but since she made it, I attribute the deliciousness to her ... :)
2 cups of fresh strawberries
3 1/8 cups of all purpose flour
2 cups white sugar
1 tbsp ground cinnamon
1 tsp salt
1 tsp baking soda
1 1/4 cup vegetable oil
4 eggs beaten
1 1/4 cups chopped pecan or any other nuts
- Preheat oven to 350 degrees F(175C). Butter and flour loaf pan but she used baking paper instead.
- Slice strawberries and place in medium sized bowl. Sprinkle lightly with sugar, set aside.
- Combine flour, sugar, cinnamon, salt and baking soda in a large bowl: mix well.
- Mix oil and eggs into strawberries.
- Add strawberry mixture to flour mixture, mixing until dry ingredients are just moistened.
- Stir in pecan or nuts.
- Pour batter into loaf pan.
- Bake for 45 to 50 minutes or until tester inserted comes out clean.
- Let cool in pan on wire rack for 10 minutes.
- Turn loaf out, and cool completely.
* it was great with a cup of hot chocolate / mocha ... :)

3/4 cup caster sugar
2 eggs
1 1/2 cups self raising flour
1/2 cup orange juice
1tbsp orange zest
2tbsp poppy seed
- put all ingredient into mixing bowl, using electric mixer beat all ingredients for 3 minutes.
- grease loaf tin n line w baking paper.
- bake at 170'c for 45mins or til baked.

1tbsp orange zest
2tbsp poppy seed
- put all ingredient into mixing bowl, using electric mixer beat all ingredients for 3 minutes.
