Salam everyone,
Ni satu dish yg palign tak boleh resist tiap kali balik kampung suami di Miri. Memang sempoiiii & sedapppp! Cuma mee nye di Sarawak ja ada rasanya. Taktau lah di Ipoh ni ada ka dak tak pernah pulak nak pi cari :(. Apapun, ni resipinya yg modified sendiri mengikut rasa sendiri, tanya orang yg jual di sana sungguh tak mahu dikongsi :(. Ini telah di 'sahih'kan oleh suami ;). Kalau ada lagi kawan2 dari Sarawak yg tahu resipi sebenar, sudi-sudi share ya, TQ.
1.5 liter air
500gm daging lembu (saya guna daging yg telah dipotong nipis)
1 liter air
500gm mee kolok kering (di Sarawak ada jual yg basah/fresh)
5 ulas bawang putih, dihiris bulat2
1 cawan minyak masak
Kicap masin
Kicap Manis
Daun sup, dihiris
- rebus daging dalam 1.5 liter air
- setelah daging empuk, keluarkan daging dan toskan dan dihiris kecil2
- renehkan air rebusan daging
- goreng bawang putih didalam minyak sehingga kekuningan dan biarkan sejuk (jadi minyak bawang putih)
- didihkan 1 liter air di dalam periuk lain
- celurkan mee (yg dlm bentuk sanggul) sehingga agak lembut
- angkat dalam senduk tapis, masukkan sebentar dalam air rebusan daging, angkat dan toskan
- masukkan mee ke dalam mangkuk, gaul bersama kicap masin, kicap manis & minyak bawang putih (mengikut citarasa anda)
- masukkan ke dalam pinggan, taburkan daging yang telah dihiris berserta daun sup
- hidangkan dgn cili jeruk / sambal

Sempoi Wan Tan Hor (Kuey Tiaw)
Ni memang my favoriteee dish. Lama dah nak try buat sendiri tapi tak terbuat sampai khamis lepas ni puasa and ternampak kawan di ofis makan lunch. Terus cari recipe di internet and balik try. Modified sikit :). Walau kuah terpekat sebab telebih tepung jagung hehehe (nak cepat masa tu org dah nak azan), Alhamdulillah ok dan habes sefamily makan.
3 Sudu Besar Minyak
4 ulas Bawang Putih, dipotong dadu kecil2
500gm Kuey Tiaw (untuk goreng)
1 Sudu Besar Kicap Cair
3 ekor sotong putih, potong kecil2
10 ekor udang kipas sederhana
Sedikit isi ayam (guna isi dada didadu sederhana kecil)
Secubit garam & serbuk lada hitam
1 Sudu Besar Sos Tiram
500ml Air Stok Ayam
3 batang Sawi, dipotong
1 Sudu Besar Tepung Jagung, dibancuh dalam sedikit air
1 biji telur, dipukul sedikit
step 1:
- panaskan 1 sudu besar minyak
- tumiskan 1 ulas bawang putih yg telah di potong
- gaulkan kuey tiaw dgn kicap cair, dan goreng sebentar hingga lembut dan ada bahagian yg agak rangup
- angkat dan masukkan ke dalam mangkuk
step 2:
- panaskan minyak yg selebihnya
- tumis bawang putih yg selebihnya
- masukkan sotong, udang dan ayam, goreng sebentar sehingga sebati dan keluar air
- masukkan garam dan lada hitam diikuti dgn sos tiram, gaul sebati
- masukkan ari bancuhan stok ayam, kacau dan biarkan mendidih
- masukkan sayur sawi, kacau sehingga agak masak
- perlahan masukkan bancuhan tepung jagung ukt memekatkan kuah (ikut citarasa anda utk kepekatannya)
- setelah agak mendidih, tuangkan telur yg telah dipukul keliling ke dalam kuali dan gaul perlahan, dan tutup api
- tuangkan segera kuah ke atas kuey tiaw
- hidangkan dgn cili / cilipadi potong

Sempoi Baked Macaroni with Cheezy Chicken Slices
Ni resipi sempoi coz nak cepat and ada macaroni lebih dalam fridge ;).
500gm macaroni (apa2 short pasta pon bole)
1 sudu besar olive oil (apa minyak pon boleh)
1 botol besar Leggo's / Prego Pasta Bake Sauce
5-6 keping Cheese Chicken Slices (Brand 5-star ada jual di Jusco), potong kecil2
1 pack (250gm) Shredded Cheddar Cheese (Family brand or apa2 brand pilihan anda :))
- panaskan oven @ 200'c, minyakkan baking pan
- rebus macaroni (ikut tempoh pada packet), bila masak tapis & toskan dan masukkan ke dalam
- panaskan minyak, goreng sebentar chicken slices
- masukkan pasta bake sauce dan tutup api, gaul sebati
- tuangkan campuran sauce ke atas macaroni dan gaul sebati
- masukkan campuran macaroni ke dalam bekas baking pan
- taburkan cheese di atas campuran pasta
- bakar selama 20-25 minit atau mengikut kegaringan yg anda mahu :)

Sempoi Apam Merekah Pelangi
Salam everyone,
So so long I've not popped by my own cafe! huhuhu. Couldn't resist to come back today. Here's a simple soft steamed cake (apam) I tried few weeks ago, TQ Saji magazine for the nice recipe. Simple to do and yummy to eat :)
200gm castor sugar
2 eggs
1 teaspoon Ovalette
1 teaspoon vanilla essence
250 gm plain flour (superfine)
1 cup Icecream Soda
Coloring / flavor of your choice
- beat sugar, eggs & ovallete till is thick that it won't fall off when poured
- sift flour, add in bit by bit with soda, beat till well mixed
- divide mixture into portions according to flavor and color of your choice
- can be made into minis or in 1 large baking pan
- boil water in steamer pot on high heat,
- for minis - fill mixture into your choice of cupcakes casings and steam till crack for about 7-8 minutes
- for large pan - pour different colors layer by layer and steam for about 10 minutes and until cracks in middle
- can be eaten with grated coconut

Such a looooong time
Assalamu'alaikum & good day everyone!
Salam Ramadhan Kareem to all my Muslim sisters and brothers!
Oh wow...it has been truly a long time since i last updated the blog. Had not got the chance to try out new sempoi recipes since starting work back in April :(. Entered my therapy room (kitchen) often but mainly to eat instead of experimenting huhuhuhuhu.
Rindunya nak update resipi sempoi baru tp belum kesempatan nak try out. kalau ada kengkawan yg nak sumbangkan / link resipi sempoi2 sudi sudikan lah ye...

Sempoi Black Forest Cake
Been meaning to try make this cake for a looong time but never dared to try until yesterday, found this recipe from Australian Women Weekly mini cookbook and the cake is scrumptious.
250gm butter, chopped
1 tabelspoon instant coffee granules / powder
11/2 cups hot wayer
200gm dark eating chocolate, chopped
2 cups caster sugar
11/2 cups self-raising flour
1 cup plain flour
1/4 cup cocoa powder
2 eggs
2 teaspoon vanilla essence
600ml thickened cream, whipped
2 x 425gm canned seeded / pitted black cherries, drained & halved
2 teaspoon cocoa powder, extra
or
50 gm dark cooking choc + 3 tablespoon cream (to make ganache)
- preheat oven 150'c, greased and line base & side of a round / square 22cm baking tin
- melt butter in a medium saucepan over low heat
- mix coffee and hot water, stir into butter
- add chocolate and sugar, stir until smooth over low heat but not to boiling
- set aside till about cool (about 10 minutes)
- using a hand held mixer, beat the chocolate mixture while adding flour + cocoa powder small batches at a time
- add eggs, one at a time and vanilla extract, mix well
- pour batter into cake tin and bake for 1 hour 45 mins, cake cooks well when skewer comes out clean
- stand in tin 5 minutes before turning onto wire rack and let cool completely
- once cake totally cold, cut into 3 equal layers
- meanwhile, beat cream with electiric mixer till fluffy
- layer cake with cream and cherries
- can also topped the cake with cream or make ganache and pur on top
- chill in fridge for about 1 -2 hours before serving

Sempoi Eggless & No-Liquor Tiramisu
Jumpa recipe ni di http://priyaeasyntastyrecipes.blogspot.com (TQ Priya :)). Sangat sempoi & sedap...
1 cawan Heavy / Thickened Whipping Cream
1/2 cawan gula (saya guna gula kaster)
20 keping roti Lady's finger (memang utk tiramisu)
1 1/2 cawan keju Mascarpone
1 cawan kopi / nescafe sejuk (terpulang kepada kuat mana selera anda)
2 sudu besar serbuk koko
- Pukul cream dengan hand mixer hingga agak gebu (stiff peaks)
- Di dalam mangkuk lain, pukul keju dengan gula hingga sebati
- Gaulkan perlahan cream dan adunan keju hingga sebati
- Susun 10 roti Lady's finger di dalam mangku empat segi, tuangkan sesudu besar kopi ke atas setiap kepingan roti atau celup dan susun (jangan biar terlalu lama, nanti terlalu lembik)
- Lapiskan separuh adunan cream dan keju di atas roti, dan ulang selapis roti dan cream lagi
- Taburkan rata serbuk koko ke atas cream dan keju lapisan teratas
- Tutup bekas dan sejukkan di dalam peti ais sekurang-kurangnya 2 jam

Sempoi Triple Choc Brownies
125gm butter, chopped
200gm dark cooking chocolate, chopped
1/2 cup caster sugar
2 eggs
1 1/4 cups plain flour
150gm white eating chocolate, chopped
100gm milk eating chocolate, chopped
- Preheat oven 180'c, grease deep 19cm square cake pan, line side and base with baking paper
- Combine butter and dark chocolate in a medium saucepan, stir over low heat until smooth. Set aside to cool (about 15 minutes)
- Add in sugar and eggs, stir till almost well mixed,
- Add in sifted flour and mix well
- Slowly add in white and milk choc, stir slowly as not to melt the chocolates. Batter will be thick and gooey
- Spread on to baking pan and bake for about 30-35 minutes. Brownies will be cooked if even if its a bit soft in middle.
- Remove from oven and cool in pan before cutting
Sempoi Stu Daging dgn Jus Nenas
800gm-1kg daging / lamb (lagi sedap yang bertulang)
2 sudu besar tepung gandum
1/3 cawan minyak zaitun
20gm mentega
6 biji bawang kecil, dibelah dua
2 biji bawang putih, tumbuk kasar
150gm cendawan butang, dibelah dua / dihiris
1 lobak merah, dipotong bulat2 sederhana
1 batang saderi (celery), dipotong sederhana besar
1 cawan juice nenas (saya guna yg kotak sj :))
2 sudu besar pes tomato (saya guna sos spageti :))
1 cawan stok daging / ayam
2 sudu besar Worcerteshire sauce
1 sudu teh herba thyme (fresh boleh, kering pon boleh)
1 sudu teh herba chives (fersh boleh, kering pon boleh)
- salut daging / lamb dengan tepung (jangan terlalu tebal)
- panaskan minyak zaitun dalam periuk yang besar, goreng daging berperingkat hingga agak perang. jangan masak semua sekali. angkat dan ketepikan.
- masukkan mentega ke dalam minyak bekas gorengan tadi
- masukkan bawang kecil, bawang putih, cendawan, lobak merah dan batang saderi hingga agak lembut
- masukkan juice nenas hingga mendidih
- masukkan daging / lamb, pes tomato, stok, Worcerteshire sauce, thyme & chives, gaul hingga sebati
- perlahankan api, tutup periuk dan masak hingga daging empuk dan kuah hampir pekat (1jam-1jam 15 minit lebih kurang)
* pastikan kuah pekat
** makan dengan nasi putih / roti atau apa2 yg anda suka

Banana Hazelnut Chocolate Mini Muffins
2 1/4 cups (335gm) self-raising flour
3/4 cup (165gm) caster sugar
2/3 cup mashed banana
1/2 cup chopped hazelnut chocolate (Cadbury or any brand of your choice)
2 eggs, lightly beaten
1 cup (250ml) milk
1/2 cup (125ml) vegetable oil
- preheat oven 180'c, place cupcakes casing in 12 mini muffin tray
- sift flour and sugar into large bowl, stir in hazelnut chocolate
- stir in all remaining ingredients
- DO NOT overmic, mixture should be lumpy
- spoon mixture into muffin casings
- bake about 10 minutes or until golden brown
- cool on rack
- serve lightly dusted with icing sugar
