Sempoi Eggless & No-Liquor Tiramisu


Jumpa recipe ni di http://priyaeasyntastyrecipes.blogspot.com (TQ Priya :)). Sangat sempoi & sedap...

1 cawan Heavy / Thickened Whipping Cream
1/2 cawan gula (saya guna gula kaster)
20 keping roti Lady's finger (memang utk tiramisu)
1 1/2 cawan keju Mascarpone
1 cawan kopi / nescafe sejuk (terpulang kepada kuat mana selera anda)
2 sudu besar serbuk koko

- Pukul cream dengan hand mixer hingga agak gebu (stiff peaks)
- Di dalam mangkuk lain, pukul keju dengan gula hingga sebati
- Gaulkan perlahan cream dan adunan keju hingga sebati
- Susun 10 roti Lady's finger di dalam mangku empat segi, tuangkan sesudu besar kopi ke atas setiap kepingan roti atau celup dan susun (jangan biar terlalu lama, nanti terlalu lembik)
- Lapiskan separuh adunan cream dan keju di atas roti, dan ulang selapis roti dan cream lagi
- Taburkan rata serbuk koko ke atas cream dan keju lapisan teratas
- Tutup bekas dan sejukkan di dalam peti ais sekurang-kurangnya 2 jam

Sempoi Triple Choc Brownies


125gm butter, chopped
200gm dark cooking chocolate, chopped
1/2 cup caster sugar
2 eggs
1 1/4 cups plain flour
150gm white eating chocolate, chopped
100gm milk eating chocolate, chopped

- Preheat oven 180'c, grease deep 19cm square cake pan, line side and base with baking paper
- Combine butter and dark chocolate in a medium saucepan, stir over low heat until smooth. Set aside to cool (about 15 minutes)
- Add in sugar and eggs, stir till almost well mixed, 
- Add in sifted flour and mix well
- Slowly add in white and milk choc, stir slowly as not to melt the chocolates. Batter will be thick and gooey
- Spread on to baking pan and bake for about 30-35 minutes. Brownies will be cooked if even if its a bit soft in middle.
- Remove from oven and cool in pan before cutting

Sempoi Bubur Kekicak

This is a family favorite, inherited from my dad's side. Simple to do and nice to taste :)

For 6 people:

300 gm glutinous rice flour / tepung pulut
5 tablespoon water / 5 sudu besar air
Color / Pewarna (depends on your preference / bergantung kepada citarasa anda)
Water / air 1 liter

- mix flour with water til form soft dough (the consistency should allow you to to roll into small balls) / gaul tepung dengan air hingga sebati menajdi doh lembut (hingga bole dibulatkan2)
- divide into equal portion according to colors you want / bahagikan sama rata mengikut warna2 yang anda inginkan
- while preparing the balls, boil water on medium heat till boiling / sementara menyiapkan bebola tepung, rebuskan air
- once water boiling, put in flour balls moderate amount at a time, balls will be cooked enough when it floats, scoop with strainer and put in a bowl of cold water to prevent them from sticking / bila air mendidih, masukkan bebola tepung (jangan terlalu banyak), bebola akan maska bila ia terapung, ceduk dengan penapis dan masukkan ke dalam semangkuk air untuk menghalang ia dari melekat

Broth / Kuah

2 cups coconut cream / 2 cawan santan pekat
1 cup air / 1 cawan air
1/2 teaspoon salt / 1/2 sudu teh garam
1/4 cups sugar / 1/4 cawan gula (adjust according to your preferred sweetness / mengikut citarasa anda)
1 teaspoon funegreek seeds / 1 sudu teh biji halba
1 piece of pandanus leave / sehelai daun pandan

- place all ingredients in a medium saucepan and cook over medium low heat, switch off heat once boiling / masakkan semua bahan di dalam periuk sederhana atas api sederhana, tutup api bila kuah mendidih
- put in the flour balls into the broth and stir to mix well / masukkan bebola tepung ke dalam kuah dan gaulkan rata
- serves warm / hidang bila agak suam

Sempoi Agar2 ala Kueh Lapis

sorry...lapis tak berapa sama hehe
Teringin sesangat nak kueh lapis tapi tak pandai2 nak buat sampai la. Last2 ada paket agar2 segera (cap burung swallow) kaler merah apa lagi eksperimen lah. Alhamdulillah menjadi :).

1 peket agar2 segera
1000ml air
250g gula
2 titik perisa ros
100ml susu (susu segar boleh, susu cair boleh)

- campurkan agar2 dengan air, masak di atas api sederhana hingga mendidih
- masukkan gula dan kacau sehingga larut, masukkan perisa ros dan masak sehingga mendidih
- perlahan kan api sehingga merenih, panas satu periuk kecil diatas api yg kecil
- ambil 400ml agar2 dan masukkan ke dalam periuk satu lagi dan campurkan dengan susu kacau sehingga sebati
- sediakan bekas kaca / loyang yang sederhana besar
- masukkan mana2 agar2 (kosong / susu, ikut suka mana dulu) selapis ukuran satu senduk sederhana, masukkan sebentar ke dalam peti sejuk untuk agak mengeras, jangan biar terlalu keras nanti lapis tidak melekat,
- cakar atau cucuk sedikit lapisan yang telah agak keras dengan garpu agar lapisan seterusnya boleh bercantum
- lapis sehingga habes dan sejukkan di dalam peti sejuk

Sempoi Choc & Strawberry Bread Pudding


Please don't mind the looks ;) ... the recipe is great ... 

3 small croissants (recommended by the recipe, I used 5 pieces soft white bread with crust)
100g white chocolate, chopped coarsely (I used plain choc)
1 cup raspberries (I used strawberries coz that's all i had, roughly chopped)
1 1/4 cups milk
3/4 cup cream (in case you do not have this, add another 1/2 cup of milk)
2 tablespoon caster sugar (can reduce if you want to control the sweetness)
1/2 teaspoon vanilla essence
3 eggs


- preheat oven 160'c, grease & line large muffin pan with baking paper in every hole
- cut / tear bread into small pieces (not too small though :))
- in a medium saucepan heat milk, cream, sugar & vanilla till over medium heat till boil
- whisk egg in a bowl, 
- remove milk mixture from heat and slowly pour eggs while whisking slowly till well combined
- put bread into muffin pan leaving some space in between for chocolate and strawberries
- pour milk mixture (custard) to fill each hole almost to top
- bake in oven for about 25-30 minutes or till almost springy
- take out pan from oven & let the bread pudding rest to cool in pan for about 10-15 minutes





* the recipe recommended to bake using the water bath method that is by placing the muffin pan in a large baking tray filled halfway with hot water, but I don't have a large enough baking tray to fit my muffin pan so i baked it direct + I love having some crusts :D
